Mukimo: An interesting twist

Mukimo and Beef Stew

Mukimo is a traditional Kikuyu (Kenyan tribe) dish. It is served at all major ceremonies especially weddings, funerals and fundraisings. A celebration is incomplete without this delicacy. Usually mukimo is simply boiled and pounded, however, my grandma is a lover of butter, ghee and cream so I’ll be making this traditional meal with a recipe I borrowed from her.

 

What you need
Serves 3

 

3/4 cup Fresh green boiled maize (shelled).

2 cups chopped Fresh Pumpkin leaves/Spinach

6 Mid sized potatoes

A teaspoon of Black Pepper

salt to taste

A tablespoon butter

3 tablespoons Cream

2 tablespoons browned onions

Method

Boil the potatoes until a fork can easily go through them, add in the pumpkin leaves or spinach and let it steam till cooked.

Drain the water and place the ingredients in a bowl together with the maize, browned onions, cream, butter, salt and black pepper.

Mash the mixture and add in salt to taste.

Remove from the bowl and shape it on a serving plate.

Serve with Kachumbari, a meat accompaniment or a vegetable soup of your choice. Can also be served with tea in the morning.
